Tower's Martini Shrimp Cocktail
Tower's restaurant and bar is high end dining in Springfield. At some point,
every character of Guiding Light will impress someone, break up at, make up
at, have a confrontation at, a romantic dinner at, a business dinner at,
celebrate at, or simply sit alone and sulk at……..Towers! One of the most
regular patrons would have to be Alan Spaulding, and with his refined taste
in wine, cigars, and steaks, this is sure to be his favorite appetizer. For
us regular folks, this is elegant and easily prepared as a large community
appetizer for a party, or even more classy as individual appetizer, or even
as a snack.
Easy: From your local bulk food store like Sam's Club, Costco, BJ's, etc.
buy a bag of the medium-to-large (depending on your budget) and thaw before
serving. Using Josephine Champagne glasses or Martini glasses, whichever you
may have on hand or can purchase very reasonably. (a Josephine Champagne
glass is the flat, shallow Champagne glass, rather than the flute shape.)
Fill with chipped ice. Hang shrimp, tail side out, around the edges of the
glass. Chill!
While chilling shrimp make sauce. In a food processor, puree fresh
raspberries. Use approximately 1/3 pint for each cup of Dijon mustard. Mix
raspberries and mustard with 1 tablespoon of sugar. Drizzle generously over
chipped ice, so that the sauce can be used for dipping.
More gourmet: Place together the same way as described above, but rather
than buying frozen shrimp, steam your own for better flavor. Fill a large
pot with ½ water and ½ beer. Add ½ a bottle of honey, two tablespoons of Old
Bay, and 2 teaspoons of salt. Bring to a rolling boil. Add 1-2 lbs of fresh
shrimp until the shrimp turn white. This is only 1-2 minutes, tops,
depending on the size. Hint: the least amount of time cooking is going to
produce a more tender shrimp
Aussie Pies
Australia seems to be a common denominator in CBS daytime: Cane is from
there on Y&R, the Forrester's launch in Sydney, Australia on B&B, the recent
departure of the recurring Aussie Simon on As the world Turns, and the
lovable Aussie thief Cyrus on Guiding Light. Fans of these hunks can now
nosh on some of their native foods that are easy to make and kids will even
enjoy.
In a skillet, brown ground beef, adding 1 cup of beer and two tablespoons of
taco seasoning. Drain grease from the beef and mix 3 tablespoons of sour
cream, 16 oz. can of carrot and pea niblets (well-drained), and ½ -¾ cup of
shredded cheese. NOTE: The alcohol is cooked out, so this is safe for kids.
You can buy frozen puff pastry in most supermarkets (found in your freezer
section near the pies). Cut thawed sheets of puff pastry into 10 inch
squares, fill center with beef mixture, and fold over, making a triangle.
Press the prongs of a fork around the edge to seal tightly. Bake as directed
on the puff pastry package. Let settle for 7-10 minutes upon removing from
oven.
