Korbel Bruschetta
Adrian Korbel, professor of Art History at Genoa City University - Adrian is
a well traveled man of the world and quite popular amongst the ladies,
stealing Colleen from JT, dating Amber, and even getting a bit flirtatious
with Victoria at times. Being a professor, especially in a city filled with
drama like Genoa City, doesn't leave a lot time for preparing authentic
meals. He gets most of his meals while hanging out at the Athletic Club.
Whether it be late nights with Colleen, or grading papers, a glass of wine
and a snack of bruschetta is perfect.
This also makes a fabulous appetizer or great addition to take to a picnic
or outdoor party. Don't be afraid to use this to top pasta with, either.
1/2 lb of fresh Mozzarella
4-6 firm ripe Roma Tomatoes
1 bunch of fresh cilantro
Minced Garlic
Salt & Pepper
Italian dry seasoning (found on your spice aisle)
Olive oil
Balsamic Vinegar
Dice Roma tomatoes and place on paper towel covered plate. Layer using paper
towels to separate and absorb as needed. This is to soak up all the access
liquid that tomatoes have. Pat as dry as possible. Place diced tomatoes in
bowl. Dice ½ lb of mozzarella into pieces approximately the size of the
tomatoes and place in bowl. Add 1 tablespoon of minced garlic. Finely chop
about half of the bunch of cilantro, just the leaves. Add salt & pepper to
taste, recommended ½ teaspoon of salt and 1 teaspoon of pepper, 1 tablespoon
of Italian seasoning, 2 tablespoons of olive oil, and 3 tablespoons of
Balsamic Vinegar. Mix thoroughly and chill.
Serve with small slices of Italian toast. Use a loaf of artesian bread
sliced thin. Take one stick of softened butter and mix garlic powder, dry
parsley, and oregano. Mix and cover each piece of toast with butter mixture
and toast just to a crisp. Place bowl of bruschetta in center of a platter
or tray and surround with Italian toast.
Strawberry Bruschetta
This is great for by the pool and a wonderfully light snack or appetizer for
the hottest days of summer. It's best served with chilled champagne for
flavor with melon ice cubes. The soaps love to flaunt their young attractive
actors and actresses in bathing suits by the pool during the summer months.
Dice and pat dry ripe strawberries just as described in the regular
bruschetta. Place in bowl. Finely chop fresh basil & fresh mint (about 1
tablespoon of each more or less of either is acceptable). Crumble fresh
Romano cheese, 1 teaspoon of sugar, A pinch of salt & pepper, 1 tablespoon
of olive oil, and 2 tablespoons of balsamic vinegar.
Rather than toast, serve this with a sweet bread. The Hawaiian King bread
that can be purchased in your deli department is really great when toasted,
or a semi-sweet graham cracker, or tea biscuit.
Melon Ice Cubes for Champagne
Make the melon balls With a melon baller - choose your favorite melon, or a
combination for color; freeze the melon balls. Drop 1-3 in bottom of
Champagne glass and pour Champagne over. Colorful, tasty, unique, and
refreshing.
