Casey's Chicken Quesadillas
In the Dorm with Casey at Oakdale U
On CBS daytime, many young characters attend college classes, but Casey is
the only one who lives in the dorm. A hot meal is not always available,
unless it comes in a pizza box. A hot meal from mom is especially an
infrequent thing for Casey. Mom, Margo Hughes, who lives just across town,
is too busy fighting Oakdale crime or keeping brother Craig and baby sis
Katie out of the judicial system to worry about what baby boy Casey is
eating while cramming for exams and resisting the urge to gamble. So when
girlfriend Maddie is off solving mysteries, and Mom is at the station, fear
not, CHICKEN QUESADILLAS will hit the spot without hitting the typical
college empty wallet.
Using the iron that your mom, aunt, or grandma bought for you when you moved
into the dorm (and you know you have not used), cover the flat side with
aluminum foil. Spray it with cooking spray if you have it. Lay flat a flour
tortilla on another piece of foil. Cover the surface with shredded cheese
and any, or all of the following: (and don't be limited to this list, be
creative) diced tomatoes, diced green chilies, refried beans, black olives,
mushrooms, sliced jalapeños (all of which can be purchased in 2-3 ounce cans
that are shelf-ready and cost less than a dollar) and salsa - a staple for
any dorm or barracks. Then use any kind of leftover chicken you may have in
your mini fridge. Hot wings, fried chicken, chicken fingers, or even the
chicken in a can (desperate times calls for desperate measures). Tear up the
chicken into small bitesize pieces, and cover your tortilla. Place another
flour tortilla on top of the contents. On medium-to-high heat, apply
pressure with the iron, allowing heat to permeate through ingredients until
contents are melted and hot throughout. When eaten with some chips and
salsa, Margo has nothing to worry about …… at least as far as her son's
nutrition is concerned.
Nick Marone Seafood Macaroni and Cheese
All that time Nick spent at sea alone left him with a hearty appetite and
plenty of time to work on his culinary skills. Now that he has become a land
lover and almost-father to little Hope, he can flex the talents he learned
while out to sea. In those fun times he has with Hope, what kid doesn't like
macaroni, making him an instant fan in the kitchen? Brooke, too, will be
wooed with this recipe when the rich milky cheeses meet the rich sweetness
from the sea. How could Nick loose these ladies after this dish…….?
This can be served as an entrée or side dish. It can also be made quickly on
the spot or made and frozen for a later date. This is a great dish for
potlucks, dinner parties, or picnics.
You can make homemade macaroni and cheese, but this really isn't necessary.
I suggest using boxed mac & cheese that includes cheese sauc,e not powder
and use elbows, not shells. Make macaroni as directed on the box and add
milk or cream to make macaroni somewhat runny. Don't worry because before
this is over, we are going to bake this dish, which will draw a lot of the
moisture out of the dish, so you want to begin with plenty of moisture to
spare.
In a skillet, melt a stick of butter ( more butter can be used, but you
don't want to over- power your other ingredients) , lemon juice, black
pepper, and 1 ½ -2 teaspoons of Old Bay seasoning. Simmer butter down on low
to medium-low heat.
**Please note that seafood will cook very quickly at a very low heat***
Use any one or combination of the following…… (I highly suggest a
combination )
1. Shrimp (out of the tail and shell) 2. Lump crab meat 3. Scallops 4.
Crawfish tails 5. Lobster tail meat diced 6. Oysters 7. Mussels 8. Clams 9.
Squid 10. Octopus {both cut into bite size pieces}
** All of the above must be in bite size portions, ready to eat without
shell***
Toss all of your chosen seafood in your reduced butter. It is okay if
seafood is only 80% cooked; actually, this is better so that it will not be
rubbery as seafood becomes often when cooked merely seconds too long.
Pour all contents of skillet into macaroni and cheese. Mix well.
Spread macaroni and seafood mixture into a greased casserole dish. Size of
dish will be based upon amount; you should be able to estimate this based on
the number of people you are cooking for.
Bake at 350 degrees for 20-25 minutes. Remove and cover first with shredded
cheese, then with bread crumbs or finely crushed wheat crackers. Bake 10-12
more minutes and let set for 7-10 minutes before serving.
Vienna meets Emma Snyder
I don't know if Vienna from “As the World Turns” has ever lived a simple
life, but we all know Emma Snyder has and prides herself on doing so. Vienna
was living at the farm and Emma is back in town. What to do when it comes
time for a Snyder family to get together? You will learn in this next recipe
that big city can meet small town and get along in a way that is pleasing to
the pallet.
Vienna Deviled Eggs
Boil and peel eggs just as you would to make any deviled eggs. Separate the
whites into halves, removing the yolks and placing them in a bowl to the
side. Add a pinch of salt and black pepper to taste to yolks and also add
just enough sour cream to make a very smooth paste. A dash of dill can be
added as well if you are partial to dill. With a melon-baller, icing bag and
tip, or by simply taking a disposable baggie and snipping off about a ¼ of
an inch from one corner, fill egg whites with yolks but NOT heaping. Top
with any one or variety of the following. For a party, use variety!!
1. A spiced shrimp 2. Caviar 3. A thin slice of cherry or grape tomato and
anchovy 4. Deviled crabmeat 5. Smoked trout 6. Sliced blackened scallops 7.
Cubes of lobster tail drizzled w/ hollandaise sauce 8. Shitake mushrooms
sautéed in butter & truffle oil or for a cheaper alternative, hazelnut or
walnut oil
Garnish lightly with any of the following. Choose your garnish based on the
color, what looks good.
Pimento, green olive slices, cucumber zest, lemon, orange, or lime zest, old
bay, or scallions.
This is a mix of traditional simple home cooking that would come from Emma
Snyder's kitchen and the high class society that Vienna could have used to
with the prince of Leonia - the perfect compromise for Oakdale's new royalty
and favorite down-home matriarch.
