Doris For Mayor Campaign Party
Doris wants badly to be high society but can't seem to shake her poor taste
and trailer park ways. Doris brings a certain comedy to Guiding Light so I
have put together some tasty fun snacks that I could see this character
serving at a campaign party. Don't get me wrong, Doris is quite a “special
character” that we love to hate, so don't hold these recipes against me (or
her). You will enjoy them whether you prepare them for your own holiday party, possible 2008 Presidential campaign party, or you simply want a midnight
snack that doesn't come directly from a bag or box on the snack aisle.
Baked Macaroni and Cheese
Start with boxed macaroni, elbows are best. Prepare as instructed on the
box. When you have completed the printed directions on box, add: 1 egg, salt
and pepper to taste, ½ stick of melted butter, and 1 cup of fancy shredded
cheddar or cheddar mix cheese. Mix thoroughly.
On a well-greased cookie sheet, pour noodle and cheese out and spread . Your
layer should be ½ -¾ inch thick.
Bake for 25 minutes. Remove and sprinkle more shredded cheese, replace in
oven. Bake 5 more minutes or until cheese is nicely melted on top. Remove
from heat and let sit 5-7 minutes before cutting.
You can cut into squares or use a metal cookie cutter to cut into shapes. A
metal biscuit cutter is also good to use for a simple but attractive circle.
After cutting to your desired shape, sprinkle with a bread crumb and grated
parmesan cheese mixture. Mixture should be about 50/50. You can add more or
less parmesan depending on your taste or you can leave this step off all
Remove stem and hull seeds from fresh small jalapeños. To remove stem cut
from the top in a circular motion around base of stem, leaving you with an
opening a bit larger that a cocktail frank or Little Smokie. Set stem aside.
Cut a slice of American cheese into 3 stripes. Roll your cocktail frank in a
strip of cheese and stuff into jalapeño. Replace stem in place. This will
“cork” your pepper so the cheese does not leak out after it is melted.
Bake for 15 minutes. You can remove stem again before serving or leave it in
place. (If you remove stem, DO NOT do so without letting Jalapeño
Pig-in-a-blanket sit for 5 minutes or you will lose a lot of your cheese)
Serve with a chilled ranch.
Cut a Boboli pizza crust or any prepared crust into breadsticks.
Approximately 3-4 inches long and 2-21/2 inches wide. Brush lightly with
melted butter. Smear generously each stick with chive cream cheese. Set
Slow cook a salmon fillet in lemon juice, butter, dill, 1 teaspoon of salt
and 1-2 tablespoons black pepper depending on your fondness for black
pepper. Check on salmon periodically as it cooks basting the top with the
lemon/butter/dill mixture. DO NOT attempt to turn, salmon will fall apart.
When salmon is fully cooked, it should just flake part. Allow this to happen.
If you want a little extra taste or zing, add a tablespoon or two of the
lemon/butter you cooked the fillet in.
Spread the chopped or flaked salmon over the breadsticks after it has cooled
to room temperature.
Sprinkle with dried dill for garnish.
Easy Turtle Brownies
Depending on the size of baking pan you use, you may need more than one box of
Mix a regular fudge brownie mix as directed on the box. Don't get the fancy
flavors or varieties because you will take away from your presentation.
Fill glass baking pan with a portion of the batter. The pan should be filled
about 1-½ inches. Bake as directed. Set aside to cool when done and repeat
making another identical sheet of brownie.
When both sheets are cool, cover what will be the bottom layer with caramel,
the kind you buy to go over ice cream is just as good and most definitely
easiest. Leave a ½ inch border around each edge. If you are going to really
lay on the caramel, leave about an inch. Generously sprinkle with walnuts
pieces or chopped walnuts. Carefully place your second layer directly on top
lining the edges up perfectly to make one unified dessert. When brownie
layers are exactly lined up on the edges, apply pressure to seal the pieces
together and push the caramel to the edges. Cut into cubes and serve.
Mini Shrimp Quiche
Bake Pepperidge Farm puff pastry shells. While shells are baking, whisk ½
teaspoon garlic salt, 1 teaspoon of black pepper, 1 teaspoon of old bay and
¼ cup finely chopped onion with a carton of egg beaters or egg substitute.
Pour egg mixture into a glass baking pan and bake until eggs are light and
fluffy. Using a metal biscuit cutter or the top of a small glass, cut out
circles of the fluffed eggs. (The size should be just right to fill the
cupped out space in the puff pastry shell approx. 3 ½ inches in diameter.)
Place cut outs into the shell.
Top with a steamed shrimp and shredded pepper jack cheese. Place back in
oven and bake just until cheese is melted.
Sprinkle with paprika or crushed red peppers to garnish.
Start with large fresh mushrooms. Remover stems and clean.
Finely chop Canadian bacon and mix with cream cheese. Place mixture into a
sandwich baggie squeezing out all of the access air. Cut off tip and fill
mushrooms by squeezing mixture through corner that has been removed.
Lightly grease baking sheet with hazelnut oil to add a little extra nutty
taste to the mushroom. Bake for 15 minutes.
Before serving, drizzle with hazelnut oil.
